ITALIAN PORK STEW-Tasty (Source:posted by Lynne German/avidcookGA-published in Taste of Home Feb/March 2010)
2/3 c. all-purpose flour 2 lb. boneless pork loin, cut into 1" pieces 4 Tbsp. olive oil, divided 1 large onion, chopped 5 garlic cloves, crushed 1 (28 oz.) can diced tomatoes, undrained 1 c. dry red wine or beef broth (I used beef broth)
3 bay leaves 1 (3") cinnamon stick 1 Tbsp. tomato paste 1 Tbsp. red wine vinegar 1 tsp. anchovy paste - I have never used 1 tsp. each dried oregano 1 tsp. dried basil 1 tsp. sage leaves 1/2 tsp. salt (I omitted) 1/2 tsp. crushed red pepper flakes 1/4 tsp. pepper 1/4 c. minced fresh parsley Hot cooked bow tie pasta Grated Parmesan cheese
