Strawberry YaYa-cooktocook
Cake Serves: 20 Cake: 1 (18 oz.) pkg. of strawberry cake mix (I could only find and used a 15.5 oz) 1 (3oz.) box vanilla instant pudding mix 1 (3oz.) box strawberry gelatin mix 1/4 cup vegetable oil (i used olive) 4 large eggs 1/4 cups cold water Frosting: 1 (8oz.) pkg cream cheese 1/2 cup granulated sugar 1/2 cup confectioners' sugar 1 (16 oz.) container of whipped topping (I used an 8oz. and thought it was plenty) 1 (15oz.) can strawberry pie filling 1 pint fresh strawberries, sliced for garnish (would dress up the cake top if serving to company, but for us at home I skipped this) Directions: 1--Preheat oven to 350*. For the cake, pour the cake mix, pudding mix, and gelatin mix directly into an ungreased 13X9 baking pan. Add the oil, eggs, and water and mix until smooth Bake 45 minutes. Let cool. 2--For the frosting, with a mixer on low, beat the cream cheese with the granulated and confectioners' sugars. Fold in the whipped topping and blend well. Spread half the frosting on the cooled cake. Carefully, spread all the strawberry pie filling on top of the frosting. Carefully, spread the remaining frosting on top of the strawberry pie filling. Garnish the top of the cake with freshly sliced strawberries. 3--Refrigerate for 2-3 hours prior to serving. Cut into squares to serve.
