Double Delight Peanut Butter Cookies-Tammy
Ingredients:
1/4 c. dry roasted peanuts, finely chopped
1/4 c. granulated sugar
1/2 t. ground cinnamon
1/2 c. Jif peanut butter
1/2 c. powdered sugar
1 roll ( 16.5 oz) refrigerated peanut butter cookie dough, well chilled
non stick spray
Directions:
Heat oven to 375*. In a small bowl, mix chopped peanuts, sugar and cinnamon. In another small bowl, stir peanut butter and powdered sugar until completely blended. Shape into 24 (1 inch) balls. Slice the cookie dough into 12 equal slices. Cut each slice in half and flatten slightly. Shape dough around balls, covering completely. Roll each into peanut mixture. Place balls 2 inches apart on ungreased large cookie sheet. Spray bottom of a drinking glass with non stick spray; flatten cookies to 1/2" thickness. Sprinkle remaining peanut mixture evenly over cookies, pressing into dough. Bake 7 to 12 minutes until edges are golden. Cool 1 minute, then remove to wire racks to cool.
