Pina Colada Muffins-Tammy 1 box yellow cake mix* 1 t. coconut extract 1 t. rum extract 1 c. flaked coconut 1 c. chopped nuts 1 c. drained, crushed pineapple
Prepare cake mix as directed on box. Stir in remaining ingredients. Do not overmix. Fill greased or paper lined muffin tins about 3/4 full. Bake 15-20 minutes at 350*.
*Note-I can get pineapple flavored cake mix at one store here so that is what I used this time.
I made extra large muffins using a popover pan, so baked them about 30 min. I sprinkled a little extra coconut on the top. It browns nicely as the muffins are baking.
