Celery Sweet Pepper Pickles-tasty
1 lb celery 4 medium onions - peeled and sliced 2 green peppers - cored and seeded 2 red peppers - cored and seeded 8 oz sugar 4 tsp salt 4 tsp mustard seeds 1 tsp ground turmeric 20 oz white vinegar 2 tbsp cornstarch blended with 3 tbsp water
Slice celery, onions and green peppers thinly, dice the red peppers. Put the vegetables into a bowl and cover with boiling water. Leave to stand for 10 minutes then drain. Meanwhile, put the sugar, salt, mustard seeds, turmeric and vinegar in a pan. Bring to a boil, add the vegetables and return to a boil and boil for 5 minutes, stirring. Add the blended cornstarch and boil for a further 3 minutes. Put into hot sterilized jars and seal. Process in a hot water bath 15 minutes
