Good morning, friends! Eyes popped open a little bit ago so I got up. It's muggy and warm out so I have the windows shut and the AC on economy. It's cool enough, but I'd prefer fresh cool air!! Yesterday we did some errands thinking that it would be a little less busy and crowded due to the holiday, but we were wrong. The market was teeming with folks buying lots of BBQ and picnic items! Chris - Thought of you and was glad to read that you had your good friend with you. Sending hugs. Lori - Good for you...canning that salsa. I never made it. Too bad it is too thin for your tastes. Maybe when you open it, you could add some more fresh veggies to it??? Maybe you could offset the vinegar by adding some peach, nectarine, or mango chunks. Birdy - I like making tarts like you do. I made a meat pie one time turning the crust as you described. I recently saw a recipe from NYTimes for Ratatouille Pie that looks really good. Tonight I'm making a recipe for "Creamy Garlic Shrimp" but will use Greek yogurt for the sauce. Will check in later. Enjoy your day, hopefully free from labor!!! Waving!

The peach pie was/is really good. I was able to get NY peaches that were lovely. There's nothing like the flavor of a fresh peach pie.
Ann--that's a good idea making a meat pie with the crust folded like that. I'll have to try it. I have to confess that I am much more likely to make a pie if I don't have to fuss around with the crust. You can't get any simpler than my "rustic" pie.
Nasty hot and humid here this morning with a heat advisory for later in the day. I went out to fill the bird feeder about 7 this morning and it was like stepping through wet gauze. Like Ann, I'm not a lover of A/C but without it I have no ambition at all.
I'm running mine on the dehumidify setting. It puts out some cool air but not as much as full cool and it really seems to cut the moisture in the air. I've been doing this all summer and haven't needed to empty the water reservoir yet. I'm using a roll-around portable that evaporates pretty efficiently. This is a new one to replace the other that I've been using for a number of years. I'm pleased with how efficient it is. My electric bill is definitely higher but not like before. National Grid says I'm 40% more efficient than my neighbors so I can't complain. Of course, it's just for myself. I'm glad I bought this one--it was on sale online back in January and I took a chance.
Tonight I'm looking at easy and cool so it will be another rotisserie chicken sandwich with bacon and romaine on French bread and, of course, peach pie for dessert.
