We ended up with a supply of 7-up that wasn't needed. Neither of us drink it so was wondering if anyone has any recipes that use it, either for baking or cooking.

I seem to remember a recipe for biscuits using 7-up. Maybe a Google search would find some thing.
Years ago, we drank 7 up with dark rum when we were in the Dominican Republic. It was good!

Hmmm, now that's an interesting thought, 7-up and dark rum. Stop on over when you're feeling better, more than enough to go around.

Almonds, Here are two T&T ways to use 7-Up:
SPRITE BISCUITS by Candykisses Serves: Makes 12-15
INGREDIENTS:
4 c. Pioneer biscuit mix 8 oz. Sour cream 1 c. regular Sprite *I use 7Up INSTRUCTIONS:
Mix Sprite and sour cream. Add biscuit mix gradually. Roll dough on floured surface and cut with a biscuit cutter. Bake 20 minutes @ 400ยบ
~~~~~~~~~~~~~~~~~ 10 Minute Lemon Cake
Ingredients
1 (18 ounce) box lemon cake mix 1 (12 ounce) can 7-Up or any lemon lime soda even diet.
Directions
Put cake mix and 7Up in a bowl. Mix for one minute with electric mixer.
Pour in microwave proof dish. No need to grease pan. *I used an 8x8" Corning Ware pan.
Microwave on for 10 minutes.
I frost it with powdered sugar thinned with juice from a lemon plus the zest.

I have used 7-Up in place of water when making up cranberry sauce with the fresh berries.

I know you weren't looking for a beverage, but Halloween is coming up.This punch actually tastes good, but is the most toxic green you can get. It's great for Halloween! The better quality sherbets give a nicer color, but if you do it for Halloween, buy cheap sherbet. It gives a horrible color. 8 c. pineapple juice 2 env. lemon - lime or lime Kool Aid mix (see note) 2 c. granulated sugar 1 qt. lime sherbet 2 liters Sprite Put pineapple juice and lime drink mix into punch bowl. Stir until sugar dissolves. Spoon sherbet into punch bowl. Add 7-Up slowly. Let stand 15 minutes. Makes about 20 cups.NOTE: Kool Aid comes in envelopes to make 2 quarts of liquid when used with water. Pre-sweetened mix may be used. Just omit sugar. I usually add more pineapple juice to cut the chemical taste. I also freeze a small can of crushed pineapple to use as the ice ring. That way the punch doesn't get diluted.

Thanks to everyone that replied and took the time to share 7-up recipes. There is more than enough 7-up here to try all of them and each one sounds good.
tasty and Jan-thanks for posting the recipe for the biscuits, sounds so easy. Candykisses, thanks for the recipe
Jan-thanks also for the 10 minute lemon cake recipe, I didn't realize something like that could be made in the microwave so I'll have to get right on that one.
Angela-I'll definitely try cranberries with 7-up, there might be enough left when cranberries appear.
Puppin3-Scones are good and my husband really likes them. I just mastered the copycat recipe for Starbucks orange scones so guess where some of that 7-up is headed.
cookguy- Our recipe club meets in two weeks and the theme is, of course is, Halloween. Yes, I'll make your punch to take as I doubt many are familiar with it.
ezdoesit-thanks for the 3 recipes. I looked at all 3 and made copies. The Shirley Temple Poke Cake would be cute for a little girl's tea party (or an adult one)
paulette-I haven't made Jell-O a lot since our girls are grown but because you just mentioned it and we have fresh carrots here I remembered mom grating (not shredding) fresh carrots and adding them to lemon Jell-O. She made it in layers so all the carrots wouldn't sink to the bottom. Growing up we all liked it so I'll definitely be making it, thanks for the idea and reminder.
So many good recipes here, thanks everyone for taking the time. I just might have to keep stocked up on 7-up, I never realized it could be used so many ways. I hope I didn't forget anyone.

7 Up Cake
Ingredients
Cake:
3 cups white sugar
1 1/2 cups butter, softened
5 eggs
3 cups all-purpose flour, sifted
2 tablespoons lemon extract
1 cup lemon-lime carbonated beverage (such as 7Up(R))
Glaze:
1 cup sifted confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract
Directions
Preheat oven to 325 degrees F (165 degrees C). Generously grease a fluted tube pan (such as Bundt(R)).
Beat white sugar and butter together in a bowl using an electric mixer until creamy and smooth; add eggs, 1 at a time, mixing well after each addition. Stir flour, 1 cup at a time, blending well after each addition until batter is smooth; stir in lemon extract. Mix lemon-lime beverage into batter and pour into the prepared pan.
Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes. Remove cake from pan immediately.
Beat confectioners' sugar, milk, and vanilla extract together in a bowl using an electric mixer on medium until glaze is smooth. Pour glaze over warm cake.
