Bruschetta Chicken
1/2 cup all-purpose flour
2 eggs, lightly beaten
4 boneless, skinless chicken breast
halves
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 Tbsp. butter, melted
2 large tomatoes, seeded and chopped
3 Tbsp. minced fresh basil
2 garlic cloves, minced
1 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
Place flour and eggs in separate shallow bowls. Dip chicken in four, then in eggs; place in a greased 13X9-inch baking dish. Combine the Parmesan cheese, bread crumbs, and butter; sprinkle over chicken. Loosely cover baking dish with foil. Bake at 375º for 20 minutes. Uncover; bake 5-10 minutes longer or until top is browned.
Meanwhile, in a bowl, combine the remaining ingredients. Spoon over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated through. Yield: 4 servings

I ususally double this recipe
This has been in our family for years!
Bianchi Original Italian Sauce & Meatballs
Sauce:
1/4 Cup Olive Oil
29 Ounce Can Heavy Tomato Puree
28 Ounce Can Peeled Tomatoes (to put in blender)
9 Ounce Can Tomato Sauce
12 Ounce Can Tomato Paste
1 1/2tsp. Garlic Sald
1/2 tsp. each of sugar, oregano, parsley, salt, pepper, onion salt, and baking soda
In a blender, blend the Peeled Tomatoes and add to a large saucepan, add all above ingredients, with an additional 2 Cans of cold water, use the 12 ounce tomato paste can. Cook over low heat, for 5-6 hours.
Add Meatballs after about 1 hour of sauce simmering.
Meatballs:2 lbs. ground hamburgmeat
1 1/2 cups bread crumbs, made from day old bread....just rub the bread together to crumble
1 egg
1/2 cup Ramono Cheese grated or you could use parmesean
1 8 Ounce can tomato sacue
1/2 tsp garlic salt, salt, and pepper
Mix above ingredients, roll into large balls..tennis ball size. Place on foiled lined baking sheet, and bake in 375 degree oven 20 minutes, turning them over after 10 min. So 10 min. on each side. Add to sauce and simmer for 4-5 hours.

Italian Bread Dipping Oil
Makes 1 Cup

Do not keep this mixture for longer than 2 or 3 days in the refrigerator, as fresh garlic has caused problems, making the mixture unsafe.
1 Cup Extra Virgin Olive Oil
1 Tablespoon Balsamic Vinegar (Optional)
1 Tablespoon Each: Chopped Fresh Basil & Parsley
1 Tablespoon Chopped Dried Oregano
1 to 2 Minced Fresh Garlic Cloves (Depending On Your Preference)
1/2 Teaspoon Salt
1 Teaspoon Fresh Ground Coarse Black Pepper
Dash of Red Pepper Flakes (Optional)
1 Tablespoon Sundried Tomatoes, Finely Chopped (Optional)
Mix all the ingredients together and let sit to allow the flavors to meld for at least an hour or two before serving. Serve in a shallow bowl with crusty Italian bread cut into thick slices.

Southwestern Pulled Pork
Source: Quick Cooking Jan-Feb 2004
2 cans (4 ounces ea) chopped green chilies--(I used only one)
1 can (8 ounces) tomato sauce
1 c barbarcue sauce
1 large sweet onion, thinly sliced
1/4 c chili powder--(I used 2 T., and it was plenty)
1 tsp ground cumin
1 tsp dried oregano
1 boneless pork loin roast (2 to 2-1/2 lbs)--we used pork tenderloin
flour tortillas
toppings: sour cream, shredded lettuce and chopped tomatoes, optional
In a 3-qt slow cooker, combine the chilies, tomato sauce, barbarcue sauce, onion, chili powder, cumin and oregano, Add pork. Cover and cook on low for 8-9 hours or until meat is tender.
Remove pork. When cool enough to handle, shred meat using two forks. Return to slow cooker and heat through. Serve on tortillas; top with sour cream, lettuce and tomatoes if desired. Yield: 6-8 servings.

Double apple bars (Sorry, no source to credit this to) ¾ c. packed brown sugar ¾ c. applesauce ¼ c. oil 1 egg 1-1/4 c. flour ½ tsp. baking soda ½ tsp. cinnamon ¼ tsp. salt ½ c. chopped apple Heat oven to 350*. Grease 9x9 pan. Min in large bowl with wooden spoon sifted brown sugar, applesauce, oil and egg. Stir in sifted flour, salt, cinnamon and baking soda. Stir in applesauce. Spread in pan. Bake 25-30 minutes. Cool completely on wire rack.

Mom's Fresh Apple Bundt Cake (Foodguy) 3 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1-2 teaspoons cinnamon 2 eggs 2 cups white sugar ¾ cup vegetable oil 1 teaspoon vanilla 4 cups peeled chopped fresh apples 1 cup chopped walnuts, optional Preheat oven to 350’. Grease and flour a 10” tube or Bundt pan. Combine first five ingredients and set aside. In a large bowl beat eggs until light, slowly add sugar and oil. Beat until light. Stir in vanilla and the dry ingredients. Fold in apples and walnuts if using. Pour into prepared pan and bake 60-70 minutes or until cake tests done. Let stand 10-15 minutes, turn out of pan and cool completely. Serve with whipped cream , ice cream or warm Caramel Sauce Caramel Sauce Combine ½ cup butter, ½ cup white sugar, ½ cup brown sugar, ½ cup evaporated milk and 1 teaspoon vanilla. Bring to a boil and cook until sugar dissolves; 1-2 minutes. Cool to lukewarm and serve over slices of cake

Beef and Mushroom Loaf (Sorry, source unknown) 2 T. butter 8 oz. thinly sliced button mushrooms 1/2 c. finely chopped onion 1 large garlic clove, minced 1 egg 1/3 c. sour cream (can also be reduced-fat sour cream) 1 T. dijon mustard 1/2 c. unseasoned dry bread crumbs 1 t. finely chopped fresh thyme 1/2 t. salt 1/2 t. freshly ground pepper 1 1/2 lb. ground beef chuck 1 - 3 pieces of bacon Heat oven to 350. Melt butter in large skillet over med-high heat. Add mushrooms and onion; cook and stir 4 to 6 minutes or until mushrooms and onion are softened and liquid has evaporated. Stir in garlic; cook 30 seconds or until fragrant. Place in large bowl; cool to room temperature. Stir egg, sour cream, mustard, bread crumbs, thyme, salt and pepper into mushroom mixture. Add ground beef; mix together by hand or with large fork until ingredients are evenly blended. Press into 8 1/2x4 inch loaf pan or place freeform loaf in shallow baking pan; place bacon over top. Bake until internal temperature reaches 160 degrees (approx 60 to 90 minutes). Remove from oven. Loosely cover with foil; let stand 15 minutes before slicing.

Tumbleweeds (Candy recipe, source unknown) 1 (12 ounce) Package butterscotch chips 2 tablespoons peanut butter 1 (12 Ounce) can peanuts 1 (4 ounces) can shoestring potatoes (chips) Melt chips and peanut butter in double boiler. Combine peanuts and shoestring potatoes to butterscotch mixture. Drop by teaspoonfuls onto waxed paper. Cool

Thanks Angela, it's one of many recipes I saved from the TOH BB that I didn't include the name of the poster. Too bad I didn't because the recipes I tried were worth giving credit to whoever shared them.
