I really enjoy seeing the difference in how everyone makes the same dish! When I make potato salad I never peel the potatoes unless they're old and some black spots might need cutting off. We like the texture.
I usually microwave the potatoes whole because I find the potato holds it shape better when they're cooled and cut. If I boil them I leave them in larger pieces and then cut them smaller when they're cool. I also leave them a bit undercooked, drain them and then put them back on the burner with the lid on and that way they're never over cooked.
