Shepherd's pie to me is a layer of ground beef and onions, a little salt thickened with a little gravy (such as Bisto) with a layer of mashed potatoes, with maybe just a sprinkling of grated cheese before it goes under the broiler to finish off. Peas MAY be a side dish , definitely not the layer between the meat and the potatoes that so many on this side of the ocean do. Not that there's anything wrong with that but it's not my comfort food version.
If you think peas with everything s bad - most places serving lasagne in England these days serve chips (french fries) as a side. Nothing wrong with either in the right place but not together!

Love peas any time, any place, but fries WITH lasagna just sounds wrong. I'm always amazed at some of the multiple side or main dish items added on burgers now. As Tasty mentioned, nothing wrong with any of them, but piled high on top of burgers doesn't even sound (or look) appetizing to me.

Wilderness--I used to belong to a pressure cooker group. They warned people nearly every week not to use a regular pressure cooker for deep fat frying. There are only a limited few brands rated for that purpose--they're pretty specialized. A regular pressure cooker runs the risk of explosion and/or severe burns. So I guess I'll have to pass on the pressure frying. Actually, I'm more interested in the flavor and may try doing something oven fried. I never considered brining--good idea.
Tasty--isn't using beef considered cottage pie? I've seen arguments that shepherd's pie has to be made with lamb. As far as I'm concerned, it's good no matter what they call it. I use it for leftovers that have gravy with them--beef, pork, chicken, turkey, etc.

Yes, you are quite right, more so I think in days gone by but shepherds pie should be made with lamb. In the days when Sunday dinner was always a roast and Mums used to do the laundry on a Monday, they needed something quick for dinner because laundry was a much more time consuming thing than nowadays. In Britain roast lamb was a popular Sunday dinner but cold lamb is not very appealing - hence shepherds pie. That said, my own shepherd's pie is made with lean ground beef about 98% of the time. Occasionally I'll see and buy ground lamb but lamb is not popular in Canada at all.
