"Not feeling 100% today, certainly don't feel like cooking. But luckily once you put the chicken in a hot oven, it cooks itself. I left two chicken quarters in a bag in the fridge overnight, with a quarter cup of Italian dressing. I think this is one of those 'recipes' they taught me in Home Ec in seventh grade. My grandmother used to cook leg quarters two or three times a week for the last 30 years of her life, but she had an unnatural affection for her Crockpot.
"I put the chicken in at 350° for about 55 minutes. I am so used to working with thin cheap roasting pans I usually put a quarter cup of water in the bottom. It adds some moisture to the atmosphere in the oven and keeps cheap pans from overheating and warping.
Added bonus is more liquid for any gravies, alas I didn't feel like making gravy, too much work. I used the pan drippings to flavor some couscous. Best part is I have enough for tomorrows lunch, since I don't think I will feel like cooking then either."
