"I had to make this three times to find the right texture. I have made it quite a number of times in the past, but never considered it next to traditional muffins. The banana makes it dense, and the leavening makes it poofy. So, a half teaspoon baking powder results in something very heavy, a teaspoon in a half makes it light and crumbly - but one teaspoon of baking powder makes a pretty decent muffin. You can also pour the batter into a 3" x 5" loaf pan if you want a nice little tea bread."
BANANA BREAD MUFFINS
1 banana, mashed 2 tablespoons butter ½ cup sugar 1 egg ½ teaspoon vanilla extract pinch salt pinch cinnamon pinch nutmeg [½ cup broken pieces of walnut] ½ cup flour 1 teaspoon baking powder cooking spray 1 teaspoon flour
Preheat 350° Cream butter and sugar together Blend in egg, banana and vanilla extract. Add cinnamon, nutmeg, salt, flour & baking powder. [add nuts if you are using] Pour into greased and flour muffin pan or small loaf Bake 25 minutes, until tests done with a toothpick
