Ping Pong Potatoes Makes 4 servings
I am embarrassed to tell how long I've had this recipe just sitting around before I gave it a try---I clipped it from the Thursday, May 1st, 1986, copy of the Daytona Beach (Florida) Morning Journal. Yes, 38 years! The paper is yellowed, and I questioned why I've hung on to it all these years, but now I know why I did! Delicious! They involved a little work, but both DH and I felt they were worth it and know they'll be on repeat. These little crispy balls on the outside and tender, fluffy potatoes on the inside are a nice change up instead of the usual mashed potatoes or baked potatoes. Ingredients: 3 medium potatoes, peeled and cubes 1/4 cup Parmesan cheese 8oz. pkg. of cream cheese, softened 1 Tbsp. butter 1/2 package of single serve instant onion soup mix Dash of pepper 2 Tbsp. green onions, chopped Milk 2 eggs 1+1/2 cups cornflake crumbs Directions: 1--In a saucepan, cook potatoes in boiling unsalted water until tender. Drain and mash. 2--Stir in grated fresh Parmesan, softened cream cheese, butter, soup mix, pepper, and chopped green onions. Mix well. Add milk if mixture is dry (I needed to, much very little). 3--Shape into 8 balls (I made them tablespoon size and got 12). 4--Dip into beaten eggs. Roll in crushed cornflakes. 5--Place on greased cookie sheet and bake at 400 degrees for 10-15 minutes, or until hot and crisp.
