It's cold here, really cold, more soup is needed. I topped this off with cream, and I should have left it off the the image so that it would look greener. I also had some fresh parsley leftover, so I am throwing it in everything.
Split Pea Soup
1 teaspoon oil 1 clove garlic, minced 1 small onion, chopped [1 slice bacon or a slice of ham] 4 cups water (or 1 cup chicken broth and 3 cups water) 2 cups split peas salt pepper [Tabasco] [Sherry] [Liquid Smoke] [heavy cream]
Saute onion and garlic in oil about 3 minutes. Add finely chopped ham or bacon Cook until bacon is crisp about 5 minutes. Add broth, water and peas. Boil about 2 minutes.
Turn off heat and let sit 45 minutes. Bring back to a boil and let simmer until peas are tender Season with tabasco, sherry or even Liquid Smoke (I like it to taste smokey, bacon rarely tastes smokey) Use potato masher, ricer, blender or food processor to get desired consistency. Add heavy cream before serving. CROCKPOT Add soup to crock after it has been brought to a boil. Cook on high 5-6 hours, on low 10-12
