Just Enough Chili

I am breaking my own rule here, this recipe can be easily lopped in half. And I have made it that way, but one serving isn't enough for one person. Chili, like nearly all bean dishes improves with age, therefore one serving doesn't do the meal justice. It also can be made with ground turkey and white kidney beans, if you go easy on the tomatoes, you can turn out a blonde chili.
I have also been veering away from the small 6-7 ounce canned goods, the prices for these small containers is now nearly the same as the 15 ounce cans; purchasing them can be wasteful.
CHILI
½ pound ground meat, (about two 4oz patties)
2 15oz can red kidney beans
1 15oz can stewed tomatoes
1 very small onion, chopped
1 clove of garlic, minced
1½ tablespoons chili powder
1 teaspoon cumin
1 teaspoon cilantro
[cayenne, Tabasco, jalapenos and other peppers to taste]
Salt
Pepper
2 tablespoons oil
water
TOOLS
Use a heavy bottom 2 quart pan or dutch oven
STOVE TOP:
Sauté onion in garlic in oil 1-2 minutes, until soft.
Add broken up ground beef and stir until all the pink is gone from the meat.
Add seasonings, spices and broken up tomatoes and mix well.
Add beans and just enough water to just cover the beans.
Stir to distribute evenly
Simmer on low at least 30-40 minutes.
SLOW COOK: After adding beans & water this can be moved to a slow-cooker for 7-11 hours. For better results crack cover to let out steam half way through.
