“Truth is any can of beans can be turned into soup, they all taste slightly different but they will all be yummy. For some reason my black bean soup comes out brown. I like to make it spicy with Tabasco and eat it with tortilla chips. They say it should be served with lemon or hard boiled egg, but my egg always sinks.”
BLACK BEAN SOUP 1½ cups cooked black beans (15 ounce can) 1½ cups stock (beef or chicken or water) 3 tablespoons hot salsa 1-2 tablespoons red wine Drain beans. Add beans, salsa, stock and wine to saucepan. Simmer 15 minute until heated through. Puree with ricer, stick blender or other method..Or simply mash the heck out of it with potato masher. Slow cooker: 6-8 hours medium
