"There are two kinds of Spinach Pies, Greek Spanakopita made with filo and Lebanese Fatayers made with dough. I don't make these often enough. You can tell I have never mastered the proper triangular shape. But one day I will. I usually make them when I know I will be needing something to eat on the road. They are very good cold and unlike brittle versions, not as much falls down your front."
SPINACH PIE 1 box frozen chopped spinach (10 ounces) 1 tablespoon olive oil 1 very small onion 1 teaspoon dried thyme 1 teaspoon dried oregano Pinch of allspice 1 tablespoon lemon juice 1 teaspoon or 1 clove of garlic FOR DOUGH use Pizza Dough recipe or refrigerated pizza dough
Make pizza dough recipe, set aside Preheat oven to 425° Thaw spinach and remove stems Mince onion, crush garlic Sauté onion and garlic in olive oil 1 minute Add herbs, spinach and lemon juice Sauté spinach mixture about 5-8 minutes until almost all the moisture has evaporated Cut dough into 4 or 5 pieces Roll and fill each pie and pinch closed Bake pie on ungreased sheet 15-18 minutes until just browned
