I now have a couple of interesting refrigerator pickle recipes I plan to try, pippin3. They do sound easy enough.
Good info to know, Charlene! I have garlic powder on hand, but the lemon pepper has me intrigued now. LOL! I'll just throw in the kitchen sink and see what happens. (rofl)

Sliced cukes, Mayo & Vinegar
Cukes & tomatoes cut into small chunks with mayo (no vinegar) Salt & Pepper both of these dishes to taste
Only recipe I know for cucumber sandwiches is sliced cukes on bread with mayo, salt & pepper

We just thinly slice and sprinkle with salt and let sit on the counter for a few hours, then rinse VERY well and squeeze dry in a clean dish towel. Place in bowl and add a few tablespoons (or to taste) of white vinegar, stir, add sour cream (amount you like). Stir and sprinkle with dried dill and a lot of freshly ground black pepper. Some add onions but we skip that step. Yum!
Several other new to me ideas here I'll have to look into, thanks.

Bake them! My aunt gave me this recipe...from Julia Child. I used to use heavy cream (end of recipe)now I use Greek yogurt. Baked Cucumbers. I also use them in stir fry. I don't add the shrimp or pork; they are good just as a side with or without rice.

I found my recipe for cucumber sandwiches, so I am definitely going to try them for the first time ever. I'm looking forward to it after all the enthusiasm people are show for them here.
I also made out some 3x5 cards for all the other ideas shared here. I'm thrilled to say I have many good ideas that I will be trying!

I had a cucumber, 3 roma tomatoes, and a little bit of leftover raw onion in the frig. I cut them all up into chunks and poured some Wishbone Italian dressing over it all; you could also do Ranch dressing also. If you don't want onion leave it out or put as little as you want in. I've even done just the cukes and dressing.
I also do the white vinegar, water, and sugar bath/dressing. I slice 1 or 2 cucumbers thin and put 1/2 tsp. salt on them. I mixed them good with my hands so the salt gets on all the cucumbers. I make sure all the cucumbers get pulled apart, so there is salt on all sides. I let them sit until they 'wilt' some and lose their stiffness, 30 min. maybe? Then I rinse them good with water to get thee salt off. I mix 2 cups water, 1/4 to 1/2 cup wh. vinegar, and 1 Tbs. or so of wh. sugar to your taste. You could use Splenda instead of sugar if you need to. I put at least a tablespoon or so; it's a taste and adjust thing. Since this is a water based dressing, I may use less water and throw a few ice cubes in to chill it faster. All these ingredients can be adjusted to your own likes. When the cucumbers are gone, what dressing is left can be dumped down the drain. I personally like to drink these leftovers. I drink basically the same mixture but use apple cider vinegar, Splenda, and water instead. It's good for your system. I figure the vinegar can be hard on tooth enamel so I rinse my mouth out if I mix up the cider vinegar.
I also have a recipe for refrigerator pickles made in an ice cream bucket, but I'm not at home right now. My DS would never wait the 6 wks. before eating. Most of the time he was in them at 3 wks. and had them gone by the 6th week.
As a farm kid, I would grab a cucumber from the garden when I walked by; wipe the dirt off on my shirt; bite off the stem and spit it aside, and just start to eat. I would just go on to wherever I was heading. I never went hungry on a farm with a garden. I did the same with tomatoes, radishes, peas, gr. beans, carrots. Grab and go.

Creamed cucumbers are the best ! I make them like my Mom and Grandma used to prepare them. A small container of heavy whipping cream, add a little sugar and a little vinegar. No measurements just test to your liking of taste. Start off with maybe a teaspoon of each the vinegar and sugar. Cut a sweet onion in thin slices and slightly salt the cukes. Put cream in a bowl and beat with a hand mixer until fluffy as you grad. add the sugar and vinegar. YUM !

When America's Test Kitchen made a recipe for a "chopped salad", they put the (peeled, if necessary)seeded and diced cucumber with diced tomato into a strainer over a bowl. Mixed in about a teaspoon salt and let drain for 15 minutes...liquid would exude making the vegetables less "mushy". They mixed in other ingredients. I sort of do this, but I add Penzey's Fox point seasoning. When the juice is exuded, I add some vinegar and sometimes a touch of olive oil. The veggies are extra crunchy.
