Easy Cucumber, Tomato and Onion Salad-cooktocook
Serves: 4, approx. 2/3 cups per serving Ingredients: 1 1/2 cups cucumber, thinly sliced 1 1/2 cups tomato, sliced or chopped (I personally like Roma best for this recipe, but any fresh variety will do) 1/2 cups onion, chopped 6 tsp. Splenda or other sweetener (I have also used regular sugar in place of the Splenda) 1/2 cup red wine vinegar 1/2 cup water 1 tsp. dried dill weed (I start with just 1/2 tsp. and depending on the day, sometimes that is enough, other days I add more) Directions: 1--Place cut up vegetables in a glass bowl. 2--Mix remaining ingredients together and pour over vegetables. 3--Refrigerate at least one hour, but loner is better. 4--Serve with a slotted spoon so that the liquid remains in the bowl.
NOTES: Easy, light, healthy, and tasty are the only words needed to describe this vegetable salad. I first made this tangy salad back in 2004 and have been making it ever since. I usually double the recipe when I make it as we enjoy it so much. Lori
